Holy Farmers offer no dialogue options at all — walking up to one produces nothing. They do talk to themselves, in two registers: hostile remarks about any non-human standing nearby, and comments on world events.

Note70% of them are female. Which means most of the people actually working a farm are women, while "wife" is broken out as a separate role that does no work. Male farmers are sometimes accompanied by one.

No first aid kits

Holy Farmers, their wives and the Holy Farm Leader all spawn without first aid kits, and the result shows up in play: whenever Starving Bandits or River Raptors reach a farm, the farmers who go down tend to bleed out where they fall, because nobody there can pick them up.

TipIf you want Holy Nation standing and a cheap good deed at the same time, walk a lap of a Holy Farm with first aid kits. Every farmer you get back on his feet is relation points.

Statistics

Strength, Toughness, Dexterity and all six weapon skills sit at 15–21, melee attack and defence likewise at 15–21, Perception only -2–4, Dodge -1.2–4.8. That is a peasant number: a step above the Holy Farmer Wife (mostly 7–13), and nowhere near enough for any real threat.

TipThese are FCS base values. They are multiplied by the racial modifier, and NPCs level up in combat exactly as the player does — so a farm that has been harassed for a long time may no longer match the table.
